Slow Cooker Sweet and Sour Pork

Ingredients
3
cups cubed peeled potatoes (Idaho or Yukon gold)
1 cup chopped onion
3 pound pork roast, trimmed
4 cloves garlic, minced
1 cup water
1/2 cup ketchup
3 tablespoons red wine vinegar
2 tablespoons light brown
sugar
2 tablespoons reduced-sodium soy sauce
1 teaspoon Dijon mustard
1/2 teaspoon ground black pepper
Salt
Directions
Arrange potatoes and onion in bottom of slow cooker. Place pork on top of potatoes and onion. Spread garlic all over pork.
In a medium bowl, whisk together water, ketchup, vinegar, sugar, soy sauce, mustard, black pepper and salt. Pour mixture over pork.
Cover and cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours.
Slice pork crosswise into thin slices and serve 12 ounces for this meal. Serve with all of potatoes, onions, and sauce

Salmon Steaks with Ginger

Prep: 5 min, Cook: 10 min.
2 Tbs. unsalted butter, softened
2 tsp. soy sauce
1/4 tsp. garlic powder
2 tsp. fresh ginger, minced
2 Tbs. sesame oil
4 salmon fillets, about 6 ounces each
8 slices lime
Combine first 4 ingredients in a bowl and set aside. Heat oil in a heavy nonstick skillet over medium high heat. Add salmon and dot with half the butter mixture. Cook about 5 minutes or until browned on one side. Turn, dot with remaining butter and cook another 4-5 minutes until salmon flakes easily when tested with a fork. Garnish with lime slices.

Almond Dijon Baked Chicken
Prep: 5 min, Cook: 20 min.
4 boneless skinless chicken breast fillets
2 Tbs. Dijon mustard
2 Tbs. mayonnaise
1/2 cup almonds, chopped
Preheat oven to 375°F. Place chicken in a lightly greased baking pan. Blend mustard and mayo together and spread on top of chicken. Top with almonds. Bake for 20-25 minutes, or until chicken is cooked.

ALFREDO sauce
this sauce can be mixed with just pasta OR
kick it up with cooked chicken or shrimp!
Alfredo Sauce:
1 pint heavy cream
1/2 cup (1 stick) unsalted butter, softened
1 cup freshly grated Parmigiano-Reggiano
Freshly cracked black pepper
Chopped fresh flat-leaf parsley, for garnish
To prepare alfredo sauce: Heat heavy cream over low-medium heat in a deep saute pan. Add butter and whisk gently to melt. Sprinkle in cheese and stir to incorporate. Season with freshly cracked black pepper. In a large stockpot, cook pasta in plenty of boiling salted water for 3 minutes. Quickly drain the pasta and add it to the saute pan, gently toss the noodles to coat in the alfredo. Transfer pasta to a warm serving bowl. Top with more grated cheese and chopped parsley. Serve immediately.
